This is going to be kind of that take on Alabama style chicken smoked to perfection.
Let's get the cooking.

These are the exact same ones that we would cook
when we were doing KCBS contest.
They're big thighs.
You don't have to do a lot to them.
We're not trying to do competition chicken here,
but I'd be like to clean them up a little bit.
A lot of times you can take this bone here
and kind of stick some butter, pop it down
just to square them up, clean that thigh up a little bit.
But we just want a good shaped thigh.
Should look like a little pillow sitting there.
But what I like to do now is just kind of take them
and spread them out a little bit.
So we got to get some seasoning on them.
So we got them all skin side down.
I'm going to use them.
He's actually lost a ton of weights.
AP season, that's salt, pepper, garlic,
and then to keep those barbecue flavors rolling.
Fuck yeah, I'm not going to do a barbecue rub.
Now we're just going to take them, flip them over y'all.
Got to have both sides of this chicken seasoned.
We're just going to do the same thing.
Hit them with the AP first, a little light coat,
and then right back with a little bit
of barbecue rub on top.
And now all there is, I take my glove hand
and just kind of shape these thighs back up
the way you want them to cook.
So if you kind of wrap that skin around,
turn them into a little pillow just by using your hand
and forming them up.
They're gonna cook better, they're gonna look better.
Y'all know we eat with our eyes first.
So for these thighs, I've got my silver back
fired up here, running about 400 degrees,
using some Royal Oak charcoal and Hickory consign pellets.
It's gonna give me some nice hardwood flavor,
but I'm gonna get-

Now I'm running them at 400 because that fat is so thick
underneath that skin on that thigh,
it needs a high heat to melt it down to render it.
That's what's gonna make that skin bite through.

from all that melted schmaltz running all over that meat.

It's taking these thighs.
And the way I like to do it
is kind of grab them by the end bone like this.
And I like to set them kind of cross ways
on that grate and make sure they're in that same form
when I set them down.
Since I touched them always like to hit them with a little bit more rub just cover. Yeah
Lightly shower a little bit right across
Gonna get this smoker closed up. We got something to do look at all these like barbecues and shit

But just not any charlotte. We are giving it an exotic modern twist. Chocolate charlotte
with a tropical heart. A luscious mango creme dotted with vibrant dolla.
Oh that was music in the right here. That was my phone. I am Bruno Albus, so let's get straight to it.
First on the agenda, the mango creme in a saucepan begin heating your mango puree.
You can make this from fresh fruits. No I didn't Bruno, I'm just charity.
You stole parts puree while I did one of his tiger cakes. In a separate bowl,
Beat the eggs with the sugar.
Now pour the egg mixture into the warm food puree,
whisking constantly over a medium heat.
We need to cook it until it thickens.
It just begins to bubble.
So it's very similar to the lemon custard.
It was in the previous place.
So one quick boil, that's it.
Remove from the heat, add the bloomed gelatin
and the cold cubed butter.
Mix until smooth with an immersion blender.
fill the prepared tart ring to a third of full and now you have a few options you can leave it
plain sprinkle it with a diced apricot or use fresh or frozen raspberries you also use your
make-ahead frozen raspberry spray and freeze your mango creamer overnight next and that's
something you want to do right before making your chocolate mousse it was two years ago
color or parchment inside the Charlotte cake ring and set it on top of a
cake board with the first chocolate sponge disc. Now for the chocolate mousse we
are making a ganache first stir the bloomed gelatin into the hot heavy cream
and then incorporate the chocolate and set it aside at room temperature. For the meringue
beat on full blast the egg whites and sugar until stiff peaks form. If your
Egg whites are too cold. You can cheat and use your flame for go easy bro. You don't want to cook them
