things out then you're kind of not getting the value there, whereas if you order cheaper
things out that are actually cooked very well, probably better, better value from that perspective.
It's not like I only go out for value, but it's, I don't know, I'm weird, it's something
thing I think about as well. You can't get dry aged steak at home. If you got your butcher
you could get a dry, you could get a dry aged steak, no problem. And then just dry brine
it in your fridge. Put it on a wire rack. I do this with all of my steaks and most of
my meats. The day before I'll pat it dry, I'll salt it, I'll put it in the fridge on
a wire rack and then the next day make sure I take it out like depending on how thick
the meat is. I'll take it out to try and get the internal up to room temperature and then
boom you've got instant crust, instant crust, instant flavour. Of course that's not exactly
dry aging, but dry brining can allow you to have obscene crust.
I'm extra aware of the cost differences.
For me, I'm far more interested in what you can do with something that's cheap rather
than showing off with something that's expensive.
