[03:17:32] pop it down just a square chat chicken with bone in it F tier I cannot stand

[03:17:40] eating stuff with bones in it and like fish a fish and there's bone in it like

[03:17:50] bro I want to be able to just I just want to be able to wreak havoc on the

[03:17:55] plate and just just take it all without having to worry about biting into

[03:17:59] some bone stuff you know I can't stand it like and seem it like ribs ribs most

[03:18:10] overrated food ever we just want a good shake that she does ribs you can't

[03:18:19] even eat with the fork and knife ribs is just terrible like a little pillow

[03:18:25] sitting there but what I like to do now is just kind of take on and spread

[03:18:28] them out a little bit because we got to get some seasoning on them. So we got them all skin

[03:18:31] side down. I'm going to use a little bit of that ap season, that salt pepper garlic and

[03:18:35] then to keep those barbecue flavors rolling, I've got some of my deep barbecue rub. Now

[03:18:40] we're just going to take them, flip them over y'all. Got to have both sides of this chicken

[03:18:44] season and we're just going to do the same thing. Hit them with the ap first, a little

[03:18:47] light coat and then right back with a little bit of barbecue rub on top. Now all

[03:18:51] it is, I take my glove hand and just kind of shape these thighs back up the way

[03:18:55] you want them to cook. So if you kind of wrap that skin around turn them into a

[03:19:00] little pillow just by using your hand and forming them up. They're gonna cook

[03:19:03] better. They're gonna look better. Y'all know we eat with our eyes first. So for

[03:19:07] these thighs I've got my silverback fired up here running about 400 degrees

[03:19:11] using some Royal Oak charcoal and Hickory combined pellets. It's gonna

[03:19:15] give me some nice hardwood flavor but I'm gonna get those good

[03:19:18] temperatures from that charcoal pellet. Now I'm running them at 400 because

[03:19:22] that fat is so thick underneath that skin on that thigh it needs a high heat to

[03:19:27] melt it down to render it. That's what's gonna make that skin bite through. It's

[03:19:31] gonna make it a little bit crispy. It's gonna give us a ton of flavor from all

[03:19:35] that melted schmaltz running all over that meat. All we're doing is taking

[03:19:39] these thighs and the way I like to do it is kind of grab them by the in bone

[03:19:42] like this and I like to set them kind of cross ways on that grill.

[03:19:46] all he did was put some spice on it.

[03:19:53] The more and more I get into cooking and how to cook food, the more I realize that most chefs are kind of frauds.
